This program is brought to you in collaboration with “SAKE HUNDRED,” a sake brand whose purpose is to “enrich hearts and add color to lives” for people around the world.While savoring “HAKUSO”—a pale snow-white sparkling sake that soothes the soul—you’ll explore Aso, the beautiful land where this delicate sake was born, and trace the story that “HAKUSO” tells. “Hakuso,” a sparkling sake in a pale snow-white hue that soothes the soul.

“Hakuso” is a delicate and beautiful sparkling sake that cannot be replicated by Western spirits. With its soft bubbles and white-gold hue, its fresh, pure aroma, beautiful clarity, and sweet flavor invite you to an elegant moment.
“Hakuso” by SAKE HUNDRED is brewed by Kawazu Sake Brewery in Aso. One of the key ingredients—yeast—is “Kumamoto Yeast,” which was developed in the region using groundwater sourced from Aso’s underground streams.

At Tsukikouju Kurokawa, the accommodation for this package, we will serve a SAKE HUNDRED special pairing dinner featuring eight varieties of sake, including “Hakuso.”

Kawazu Shuzo Brewing Partner

The company was founded in 1932 (Showa 7) after acquiring a sake brewery established approximately 150 years ago.
While preserving traditional brewing methods such as tank pressing and bag pressing, the brewery pursues its own unique sake character and actively takes on new brewing challenges. Through a process of trial and error, it continues to pursue a “new tradition” to pass on to the next generation.


The Aso Caldera and Water


The Aso Volcano was formed approximately 270,000 years ago and has been active ever since. The current caldera, with its distinct collapsed terrain, was formed approximately 90,000 years ago following a massive pyroclastic flow eruption.Approximately 50,000 people live within the caldera alongside the volcano, and vast grasslands stretch around the caldera—landscapes maintained by human activity, including grass harvesting and controlled burning, a practice believed to date back more than a thousand years.

Aso’s groundwater springs from the base of cliffs on the mountain’s slopes and has been used and preserved as a shared resource, primarily for mixed farming that combines rice cultivation, dry field farming, and grazing. This lifestyle—which involves cultivating rice paddies and dry fields while grazing livestock on pastures—contributes to the conservation of both nature and water sources.

Sake is made up of 80 percent water. The water used for “Hakuso” is natural spring water from the headwaters of the Chikugo River, part of the Kuju Mountain Range watershed in Aso. It is soft water with a hardness of 35 mg, making it soft and smooth. Its subtle sweetness creates a synergistic effect with the natural sweetness of the rice.

Aso Shrine

Having fused with volcanic beliefs that revere the crater of Mount Aso as a divine entity, the shrine has been revered as the Ichinomiya (primary shrine) of Higo Province.According to the shrine’s records, Aso Shrine is said to have been founded in the 9th year of Emperor Kōrei’s reign (282 BCE). With a history of approximately 2,300 years, it serves as the head shrine for the approximately 500 “Aso Shrines” located throughout Japan.The photo shows the “Fire-Waving Ritual,” held to commemorate a bountiful harvest of rice, the raw material for sake.


Kurokawa Onsen

Deep in the heart of Aso, Kumamoto Prefecture. The Kurokawa Onsen resort area is located on the border with Oita Prefecture, in the north-central region of Kyushu. Until Heisei 12 (2000), it was such a hidden gem that it wasn’t even listed as a hot spring resort in the “Kumamoto Prefecture Comprehensive Map” published by a local newspaper.
The efforts of many people involved with Kurokawa Onsen have shaped the landscape of a “high-quality satoyama,” and as the “Open-Air Bath Tour” pass has gradually gained recognition, the area has now become a nationally renowned hot spring destination. Within a 5-kilometer radius, 30 inns and 34 shops are scattered throughout the area.
