Cuisine

The most significant feature of Kaga City from a natural environment perspective is that two rivers (Daishoji River and Doubashi River) do not straddle other municipalities and are complete within Kaga City from their sources to their mouths. Dainichiyama, the headwaters of the Daishoji River, is 1,368 meters above sea level, and the extremely short distance to the coast means that Kaga City has a diverse ecosystem (forests, virgin forests, semi-virgin forests, lakes, marshes, rivers, wetlands, paddy fields, etc.). The diversity of the natural environment leads to a diversity of living creatures and foods, and the city is blessed with rich foods from the mountains, satoyama, lakes, marshes, and the Sea of Japan, respectively.
